Ingredients for Thai Curry Recipe with Organic Coconut Meat
1lb FeedingChange Young Thai Coconut Meat
345 ml FeedingChange Young Thai Coconut Water
2 Tbsp. FeedingChange Thai Spice Mix (cumin, coriander, paprika, lemongrass, turmeric, Spice Heaven, Himalayan salt, black pepper, Bird’s Eye chili)
1” piece of fresh ginger
2 small cloves of garlic
1 Tbsp. tamarind
3 cups of filtered Water
1 julienned red bell pepper
3 diced Roma tomatoes
1 cup sliced shiitake mushrooms
1/2 cup diced red onions
2 finely diced green onions
Cilantro – handful minced
Basil – handful minced
Pea Shoots – 1/2 cup
How to Prepare:
- Blend first 8 ingredients in a blender until creamy smooth.
- Combine all vegetables in a large bowl and pour over the curry mixture.
- Serve in smaller bowls and top with garnish: a little cilantro and basil, and 4-5 pea shoots.
